Phosphates (STPP, TSPP)
Sodium tripolyphosphate (STPP) and tetrasodium pyrophosphate (TSPP) are inorganic sodium phosphate compound.
Application:
Both phosphates are approved food additives (STPP as E451(i) and TSPP as E450(iii)) used to improve the quality, texture, and shelf life of various products.
Moisture Retention STPP is particularly noted for its superior ability to retain moisture in meat, poultry, and seafood, which improves juiciness and yield. TSPP also aids in moisture retention but is more often used for texture and flavor preservation in items like dried meat snacks.
