Pectin is a natural, plant-based soluble fiber and a complex carbohydrate used primarily as a gelling agent, thickener, and stabilizer in foods like jams and jellies, as well as in pharmaceutical and cosmetic products.
Types of available commercial pectin, classified by their degree of methyl esterification (DE), are :
High Methoxyl (HM) Pectin.
Low Methoxyl (LM) Pectin.
Amidated Pectin (NH Pectin).
