Available Forms and Types
Malt extract comes in two main forms, each with specific uses and characteristics:
Liquid Malt Extract (LME): A thick, syrupy substance with a consistency similar to molasses and a richer malt profile. It contains about 20% water and is a popular choice for homebrewing because it dissolves easily in hot water.
Dry Malt Extract (DME): A fine, sticky powder created by dehydrating LME to a 2% water content. It has a longer shelf life and offers better consistency in color for brewers. It’s easier to store after opening than LME.
